Seattle, Washington. Let our state-of-the-art facility and award winning staff help

to professional winemakers and provide hands-off to hands-on experiences.
Our head winemaker Michael Almquist is a self-taught semi-retired techie
digital ninja (founder and CTO of f5 networks) and former professional cook.
Starting his self-taught journey in 1999, he
has systematically conducted thousands and thousand of experiments, measured and
recorded the results, and put together a process to make award winning wines
(he IS a g33k). The proof is in the ever increasing list of awards
across multiple varietals, styles, whether white ... red ... rose ... dessert.
We focus on grape-to-bottle small boutique hand crafted 1/2 ton lots (a single
barrel, 25 cases, 300 bottles) with a majority of clients around 300-500
cases. We are not a tank farm. Our clients, living locally and from around
the world (currently our furtherest client is in Australia), can participate
as much or as little.
We work with 1) those curious to learn more by way of making and/or blending
wine 2) wine consumers and licensed wineries ready to take the next step 3)
restaurant, grape growers, organizations, etc looking to expand their brand.

Wine Making Services
Our award winning team and state-of-the-art facility provide full service
winemaking from fruit sourcing, harvest, fermentation, aging, blending, and
packaging. Located in the heart of Seattle, we make ultra-premium wine from
grapes sourced throughout the Pacific Northwest, Oregon, and California.
Based on the target wine, we help with grape selection from the best vineyard

coordinate harvest date, bin drop and fruit delivery to our facility in
Seattle, crush, destem, conduct harvest lab work (TA, pH, BRIX, SO2), start
fermentation, yeast trials, must adjustments, innoculations, enzymes,
nutrients, additions, set a daily punchdown schedule, press based on wine style,
tank settle gross lees, make barrel selection (NEW & USED available),
steam sterilize and prep barrel, fill, MLF innoculation, 1st racking with
nitrogen (N2) sparge, multiple rackings based on target wine style, wine
maturation and barrel topping, SO2 adjustments, taste, blend, assist in
branding and legal label creation, and bottle.
White and rose wines typically are racked once, fining trials conducted,
filter, crossflow, and bottle.
Grape allocation is first come / first served. We have made award winning
wines from: Aligote, Barbera, Cabernet Franc, Cabernet Sauvignon, Carmenere,
Chardonnay, Chenin Blanc, Cinsault, Counoise, Dolcetto, Grenache, Malbec,
Marsanne, Merlot, Mourvedre, Muscat Morio, Muscat Nero, Muscat Canelli,
Nebbiolo, Petit Verdot, Petite Sirah, Pinot Gris, Pinot Noir, Primitivo,
Riesling, Roussane, Sangiovese, Sauvignon Blanc, Semillon, Souzou, Syrah,

Used barrel allocation is first come / first served. We work with many
coopers making barrels from multiple forest oak sources (American, Australia,
Eastern Europe, French, Hungarian, Russia, Slovakian) - 108 different
barrels from 29 vendors ... including acacia.
